First go to your local library or bookshop and borrow or buy everything you can on relocating to Italy. Take the info as a general guide though, often out of date by the time published. Also read this forum throughly, you be surprised on the amount of info you can glean from here!

Plummers in Italy are usually free lance, it is unlikely that you will find an employment within a firm.
Certainly not within a local authority anyway.
But there is plenty of money in the business, so you will be fine!
We have a flat in Pragleato, in the Alps, to get the plummer to come and solve your problem you have to beg him, as he is so busy!

From what I have gathered you would have to get some kind of certification to 'ply your trade' in Italy so that you could certificate your work, although if you relocate to a suitable area you could work on the 'dark side' for all the ex pats and be paid cash in hand...
