Researchers at the University of Calabria have devised a technique based on magnetic resonance imaging (MRI) to establish the freshness and origin of olive oils through molecular analysis.
According to researchers, this technique allows to determine with absolute precision both the freshness and the origin of the olive oil, thus helping to expose those counterfeit products passed off as authentic ½ûÂþÌìÌà extra-virgin olive oil.
The patent has already been authorized by the University and promises to be an absolute novelty in the realm of initiatives aimed at ensuring the best quality for products of daily use, like olive oil.
In a written note, the university said it hopes this research will send a signal to those supermarkets that sell extra-virgin olive oil at less than 3 euros per kilo.
